Pulled Pork Quesadillas and Tacos

Those Pulled Pork sandwiches were very delicious. However, I saved some of the pork before adding the barbeque sauce. Now you didn’t think that was all I was going to do with that nice Boston Butt did you? That was quite a bit of pork, and I’m always thinking Tacos because of my love of Mexican cuisine. Very simple to make. Just grab some tortillas or hard taco shells of you like the crunch. Personally I prefer the hard shells, however,  I only had soft corn tortillas on hand. I could have remedied that by tossing the tortilla in a little hot oil, and bending one end over to the other with tongs to create a crisp taco shell. Just add your favorite Mexican sides and dinner is served.

Saute of mushrooms, garlic, and sweet red peppers

Begin by heating a small amount of oil in a heavy bottom skillet;  add the tortilla. Next add  shredded cheese ( I used Asadero and Queso chesses), top that with the pulled pork, add the mushroom & red pepper mixture

Place another tortilla on top, let it brown abit, then flip and give a little color to the other side.  We just want to heat it through and melt the cheese.  Alternatively you can add your toppings  on the first tortilla and simply fold it over in half.  Repeat the process until you’ve made enough to your satisfaction

Slice into four pieces and serve

The pork was so very tender. These didn’t last very long on the dinner table

Pulled Pork Quesadillas

For the Pulled Pork Tacos, simply grab your choice of tortilla or taco shells, add the pork along with what tickles your fancy. I simply added chopped tomato, chopped jalapeno peppers, cilantro, with dollop of sour cream. Add a sprinkle of shredded cheese if you wish

Nothing like Spanish Rice and Mexican Re-fried Beans (vegetarian) to round it out

A little squeeze of lime…perfecto !

Of course the addition of Salsa is always nice
