Cream Of Celery Soup

Celery.  At times it may seem so under-appreciated.  We use it many ways–dipping in a tasty vegetable dip as we savor its  unique crispy bite, chopped with onion and bell pepper in that infamous trio that we cook with so often. But do we really appreciate the rich, deep flavor that it entails when cooked I ask?  That’s the flavor found in this soup–that rich ‘resonance’  that only celery can impart. Although this soup is lite, I find that it has an elegance to it –if you will. Simply a celadon puree of tastiness. 

Garnished with curly parsley, celery leaves.  Added a few braised leeks and asparagus spear tips

Or simply with a dash of pepper, buttery croutons, and chopped celery leaves to garnish

Ingredients :

2 Tbsp butter

2 medium onions, coarsely chopped

1 bunch celery–washed, leaves removed and chopped

1 medium potato, peeled and diced–about 1 cup

2 Tbsp flour

Salt & pepper

4 cups chicken stock

1/2 cup heavy cream

parsley, chopped celery leaves or chives to garnish

croutons– can be made by simple heating a few Tbsp butter in a non-stick pan, and cooking cubed bread of your choice


Melt the butter in a 2 quart pot over medium heat  and add the onions celery, and potato, and stir. Cover the pot, reduce the heat to low, and let the vegetables steam for about 10 minutes or so, stirring once. Remove the cover and stir in the flour.  Next add a little salt and pepper, then whisk in the chicken stock–one cup at a time. Bring to a boil, whisking, then reduce the heat and simmer for about 15 minutes, until the vegetables are completely tender. Remove the mixture from the heat and let it cool a tad, then puree in a blender (do this in batches if necessary), and return it to the pot. Bring to a boil, whisk in the cream and adjust the seasonings and consistence if needed by adding a little stock if the soup is too thick. Pour into individual soup bowls and garnish with the parsley, croutons, celery leaves.  I also had some asparagus on hand, so I blanched a few spear tips and added that to the soup as well as a few chopped braised leeks.

Ahhhh…. the love I put into cooking with potatoes. Chopped the onions and diced this ‘lovely’ potato. Makes you feel all warm and fuzzy inside doesn’t it?

Into the pot go the onions, potato, and celery with the melted butter

Stir them all together

All steamed, nice and tender. The aroma was wonderful

Added the flour

Stirring in the chicken stock one cup at a time, then into the blender

Back into the pot. Addition of the cream, and finish cooking.

And time to eat
