Steamed Clams with Roasted Vegetables and Pappardelle

I was in Costco, which is nothing unusual as I’m in there every month picking up something or another. I can never pass by the fresh seafood without stopping and getting something, and today it was clams, 5 pounds of fresh ‘just waiting for me’ clams. Of course the first thing I thought about making was Clams Casino–one of my all time favorite dishes. However, I had some pappardelle pasta and thought that would go nicely with those lovely clams. So, I sautéed a few already roasted vegetables, and some chopped asparagus… and that made a nice meal along with the clams.

Gave them a nice wash, scrub and steamed them  in white wine with shallots, garlic, and a little butter

With a saute of red, green, and yellow bell peppers, onions, garlic, shallots, sun-dried tomatoes, asparagus, roasted egg-plant, roasted artichoke hearts, and roasted red bell pepper

Clams–little pocketbooks of pleasure

Pappardelle is such a nice pasta. I love this bold, yet delicate ribbon-like pasta.  Its like fettuccine on steroids.

    What a beautiful dish! I’m not much for clams, but I know my husband would love this dish!
