Tofu & Veggie Omelet, Parmesan Cheese Grits, with Plantains

Nothing like getting the morning started with a nice overstuffed omelet

Stuffed with sautéed onions, garlic, red & green bell pepper, yellow squash, ginger, and shiitake mushrooms, with a smattering of grated cheddar cheese

Garnished with fresh chopped parsley and basil

Did a quick fry on some sliced plantains in a little peanut oil

Nice and golden, with a sprinkle of powdered sugar

They went right nicely with the omelet

Sautéed a few langostinos to go with those grits

I had some Watercress Sauce left over from the Garlic-Parsley Baked Cod from last evenings dinner. It went quite well with the omelet
