Sesame Ginger Mushrooms

A very simple dish of button (white) mushrooms. Just something to do with those mushrooms that were sitting in the fridge taking up space…can’t let them sit there too long. These were sauteed to a nice, deep, dark brown. If you simply love mushrooms, this little dish will suffice.

Eat as is, or add a favorite pasta or rice

Went very well with fettuccine.  Added a sprinkle of red pepper flakes for a little spice

Heat 1 Tbsp peanut oil over medium-high heat, and the mushrooms and saute with an occasional stir

Mushrooms are full of liquid, and after about 5 minutes this will be noticed. Turn the heat up to high and continue to cook until all of the liquid has evaporated

All of that mushroomy liquid has evaporated, add a Tbsp of peanut oil, reduce the heat to medium, and saute until the mushooms become a nice dark brown…about 7 or 8 minutes

Toasted a heaping Tbsp of sesame seeds

Added that heaping Tbsp of toasted sesame seeds, along with a heaping Tbsp of grated fresh ginger and continued to cook, stirring constantly until the ginger is fragrant, about 1/2 minute. Note the nice brown color of those shrooms

Adding 2 Tbsp soy sauce

2 Tbsp mirin and cook for about 30 seconds more until those liquids have evaporated, remove from heat and…

… transfer to a serving dish, garnish with sliced scallions,  and serve right directly
