Citrus Salmon & White Asparagus

Just a quick dish I threw together for lunch when there was nothing special planned…a kind of  “on the fly” quick fix for a hungry girl.

A dish that’s tasty and filling.

The white asparagus was topped with a zesty Herbed Butter Orange Sauce that included orange thyme, terragon, the juices of fresh orange and lime, & finely chopped parsnips. The parsnips really added another dimension of flavor that was very nice. A squeeze of lemon and lime over the salmon quenched it.

The Langastinos were sauteed with a little chopped garlic and leeks in extra virgin olive oil, garnished with a little chopped tomato

The Salmon seasoned with salt and fresh cracked black pepper and oven roasted to a nice medium rare. I didn’t want a lot of seasonings to interfere with the pure flavor of the salmon
