Fish with Pico Garlic Rub

Gourmet Potato Mix–A little chopped garlic, olive oil, fresh rosemary, thyme, and sage, salt & pepper and back till tender

Spaghetti Squash was a nice addition

Sugar snap peas for a little greenery

Rub Ingredients:

2 Tbsp garlic powder, 2 Tbsp parsley, chopped, 1 tsp paprika, 1 tsp Chipotle chili, ground, 1/2 tsp sea salt

Fish:

1 1/2 lb tilapia filets

1/2 c all-purpose flour

2 Tbsp extra virgin olive oil

Mix all of the rub ingredients together.

Coat the fish with flour. Heat 2 Tbsp olive oil in a pan (I used a non-stick pan) on medium heat. Place the fish in the pan and cook for 3 to 4 minutes. Turn and apply the garlic rub, and cook 3 – 4 minutes more.  I also applied the rub to the other side of the filets. Serve with a splash of fresh lemon or lime, and with  your favorite accompaniments.

    This is delicious! a tasty and easy fish recipe. i didn’t have chipotle chili spice so i used chili powder. i also eliminated the salt and it wasn’t missed. i’ll make this again.
