Spinach and Feta Cheese Omelet

Of the variable countless ways to make omelets, I settled for one with good’ol spinach to ‘tickle my fancy’ or I should say–taste-buds this morning. Immediately feta cheese came to mind for some reason. I guess that’s  because when I construct omelets I generally will go for grating a little Jack cheese, Gouda, Gruyere, etc., or  just plain cheddar. However, this morning I wanted the “tang” of feta. Actually the taste was pleasantly mild combined with the spinach.

A little sprinkle of chopped scallions, a dusting of paprika, and Smoked Salmon

I began with sauteing a little chopped red onion, and chopped red bell pepper

Added a fee chopped shiitake mushrooms, saute until the mushrooms are just tender, add a little salt and pepper

Whisked 4 eggs with 1 Tbsp cream, chopped parsley, chives, and basil

Into the pan, add salt and pepper. Gently push the outer edge toward the center to allow more of the eggs to contact the pan

Add the red onion, red bell pepper, and mushrooms

Add the cooked spinach

A sprinkle of feta

Fold and onto the plate
