Shrimp Stew

Just a recipe that I threw together to satisfy my ever-present desire for something with shrimp as the main bite.

I wanted a stew, but yet I wanted a bounty of shrimp, so I put those two together and voila! This is one of Mr. Bills favorite dishes, and he’d have it today if I just so much as mentioned it.

Shrimp Stew

Served with fragrant Jasmine Rice

Cut up some onions, bell peppers, celery, yellow squash, & garlic

Our shrimp is all cleaned, shelled, and deveined

Got the white mushrooms ready…they wanted to join the party too. No discrimination here.

Heated some Extra Virgin Olive Oil in the pan.

Added the chopped veggies–onion, bell pepper, yellow squash, celery–sauteed for a few minutes, just to when everything’s getting pleasingly aromatic. Want to keep some texture

Added the chopped garlic, & cracked black pepper….kept on going

Threw the white mushrooms into the mix

Got the shrimp going

Ahhh… nice & pink says “we’re done!” Either that or they’re blushing

Added the shrimp and the veggies together

Added the tomato mixture I had simmering. I simmered two cans of stewed tomatoes with enough sugar (use your discretion) to cut the acidity of the tomatoes and just a hint of sweetness…not too much, also added a little chopped garlic and fresh cracked black pepper

Stirred everything together, let it simmer a bit to marry all of those flavors together. That’s love in a pan.  And we’re done—Tasty Shrimp Stew
