A Bite To Eat

You know how you have those days when you haven’t done the grocery shopping to restock the cupboards…and no dinner has been planned…but yet you’re hungry, so you scrounge around in the kitchen to see what on earth you can eat? Well, this is one of those meals. Initially I was just going to pop the Edame into the micro wave and leave it at that. But then I started thinking…I can add to this, and of course I always have some type of sea food on hand, as well as dry pasta. So, this is what I came up with on the fly.

Langostinos and pasta

Sauteed onions, red & green bell peppers, shaved & thinly chopped parsnips, and garlic

Added Edame, mixed, sauteed a little more

Next added our mix of morel, oyster and shitake mushrooms…sauteed a tad more. Salt and pepper. The mushrooms were re-hydrated. I most often have some dried mushrooms on hand…you never know…
